Soy Sauce Grilled Baby Back Ribs

Ingredients :

  • 500g of baby back ribs 
  • 10 shiitake mushrooms
  • 10 slices of pumpkin 
  • 300g of Lettuce 
  • 1 cucumber
  • 5 King oyster mushrooms
  •  ½ onion
  • 4 cloves of garlic 
  • 2 slices of pineapple
  • ½ pearl 
  • 20ml of honey 
  • 50ml of red wine 
  • 120ml of Korean soy sauce 
  • 4ml of sesame oil 
  • 50g of Korean sweetened sugar water 
  • 20g of minced chili pepper
  • Grated ginger
  • Pepper
  • Chili powder

Instructions :

Step 1:

  • Rinse the shiitake and king oyster mushrooms, cut off the roots. Rinse the ribs under diluted salt water.

Step 2:

  • Cut the ribs into 4cm sections. Use a knife to score evenly across the meat. Peel the garlic, pineapple, pear, and onions, then finely grind them. Mix the ground mixture well with honey, wine, soy sauce, sesame oil, sugar water, chili pepper, some grated ginger, ground pepper and chili powder. Marinate the meat with the seasoned mixture and cover it, put in the refrigerator for 2 hours.

Step 3:

  • Put the meat on a baking tray, put it in the oven at 1800C for 40 minutes. After that, flip over to the other side and cook for another 40 minutes, until the ribs get golden. Bake the shiitake, king oyster mushrooms and pumpkin until golden. Put the cooked ribs on a plate, serve with the mushrooms and pumpkin and lettuce with sliced cucumber.
